Als ich meine Schätze wieder einmal durchsah war ich wirklich überrascht, dass sich tatsächlich eine beachtliche Anzahl an unterschiedlichen Caol Ila Abfüllungen als Samples, geschlossenen Flaschen und geöffneten Flaschen angesammelt hatte. Es ist einfach passiert. Caol Ila rangiert bei mir eigentlich nicht unter meinen Top 5 Brennereien, trotzdem greife ich immer wieder gerne zu, wenn ich eine interessante Fassreifung dieser Brennerei - vor allem aus dem Sortiment von unabhängigen Abfüllern - sehe.
So wie auch bei diesem Whisky, einem zwölfjährigen Caol Ila aus der A Dream of Scotland Reihe vom Brühler Whiskyhaus, der in einem Marsala Superiore Dolce Fass reifte. Marsala ist ein italienischer Likörwein. Der Begriff Superiore steht für eine Mindestreifung des Weins von zwei Jahren. Und Dolce zeugt von mehr als 100g/l an Restzucker. Die Basis dieses Islay-Rauchers, der in Fasstärke mit 55,9% in 611 Flaschen abgefüllt wurde, ist ganz nach den Vorlieben von Marco Bonn, dem Chef in Brühl, eine süße.
Ich bin neugierig, wie sich das Caol Ila Destillat mit dieser Fassart kombiniert. Süße und Rauch kann interessant werden.
Aussehen
Eiswein oder Dessertwein, heller Bernstein.
Nase
Schön fettiger Rauch mit ordentlicher Aschebildung kommt aus dem Holzkohlegriller. Zusätzlich sorgen noch weicher Teer neben dem Griller für eine schmutzige Seite des Rauchs. Hat man die ersten Wellen des aschigen Rauches überwunden, entdeckt man süße Kräuteraromen, wie von einem Schweizer Rucola Zuckerl. Die Süße verwebt sich im weiteren Verlauf mit Vanille und ein paar Spritzern Zitrone und dem ätherischen Öl aus der Zitronenschale. Über all diesen Geruchseindrücken schweben die ganze Zeit maritim würzige Aromen. Der Alkohol meldet sich zwischendurch immer wieder mit einem leichten Prickeln in der Nase. Aber davon abgesehen ist es eine sehr aromatische und fein ausbalancierte Nase.
Geschmack
Ein schöner sehr süßer Antritt mit einem cremigen Mundgefühl eröffnet den Geschmacksreigen. Neben dem anfänglichen Karamell und Weinzucker ist natürlich auch der Rauch von Beginn an sehr präsent. Gepaart mit Asche und etwas Teer liegt er richtig fett schmierig im Mundraum. Dahinter lassen sich wieder viel Vanille und getrocknete Küchenkräuter finden. Die Zitrone aus der Nase ist im Geschmack überwiegend im Hintergrund. Auch der maritime Touch ist mit seinem salzigen, Seetang ähnlichen Aroma wieder vorhanden. Der Alkohol ist wuchtig und schiebt ordentlich an, ist aber kein Problem. Nach hinten heraus kommen immer mehr bittere Geschmacksnoten zum Vorschein.
Abgang
Hier kämpfen anfänglich die Süße mit dem Rauch und den sich aufbauenden Bitternoten um die Vorherrschaft. Die Süße verklingt zunehmend und die bitteren Geschmäcker, zusammen mit der teerigen Asche nehmen gegen Ende immer mehr an Fahrt auf. Vom aschigen Rauch abgesehen gestaltet sich das Finale mittellang.
Fazit
Dieser Caol Ila beweist für mich wieder zwei Dinge. Erstens Caol Ila wird häufig zu Unrecht negativ im Vergleich mit den anderen Islay Brennereien bewertet, das Destillat ist sehr gut. Zweitens, Caol Ila funktioniert mit einer Vielzahl an Fassreifungen. Diese ADoS Abfüllung gefällt mir richtig gut. Schöne tolle Nase. Süß, kräftig würziger Geschmack mit ausreichend Rauch und Asche. Einzig die zunehmende Bitterkeit gegen Ende hin stört den sonst durchwegs sehr positiven Gesamteindruck ein wenig.

When I looked through my treasures again, I was really surprised to find that I had actually accumulated a considerable number of different Caol Ila bottlings as samples, closed bottles and opened bottles. It just happened. Caol Ila is not really one of my top 5 distilleries, but I still like to pick it up whenever I see an interesting cask maturation from this distillery - especially from the range of independent bottlers.
This is the case with this whisky. It is a 12 year old Caol Ila from the A Dream of Scotland range from the Brühler Whisky Haus, which has been matured in a Marsala Superiore Dolce cask. Marsala is an Italian fortified wine. The term Superiore stands for a minimum ageing period of two years. And Dolce indicates more than 100g/litre of residual sugar. The base of this Islay smoker, bottled at 55.9% cask strength in 611 bottles, is a sweet one, just as Marco Bonn, the boss at Brühl, likes it.
I'm curious to see how the Caol Ila distillate combines with this type of cask. Sweetness and smoke can be interesting.

Appearance
Ice wine or dessert wine, pale amber in colour.
Nose
Nice greasy smoke with a good amount of ash from the charcoal grill. In addition, soft tar next to the grill gives a dirty side to the smoke. Once you get over the first waves of ashy smoke, you discover sweet herbal flavours. As the smoke progresses, the sweetness is interwoven with vanilla and a few dashes of lemon and the essential oil of lemon peel. Spicy maritime flavours hover over all these aromas. The alcohol shows up from time to time with a slight tingling effect on the nose. But other than that, it is a very aromatic nose, with a fine balance of flavours.
Palate
A beautiful, very sweet opening with a creamy mouthfeel introduces the aromas. In addition to the initial caramel and wine sugar, the smoke is of course very present right from the start. Coupled with ash and a bit of tar, it is really fatty Behind this is a lot of vanilla and dried herbs. The lemon from the nose is mostly in the background on the palate. The maritime touch is also present again with its salty, seaweed-like flavour. The alcohol is strong and gives a good boost, but is not a problem. Towards the end, the bitter flavours become more noticeable.
Finish
Here the sweetness is initially in a battle for dominance with the smoke and the build up of bitterness. The sweetness gradually fades and the bitterness, together with the tarry ash, gains momentum towards the end. Apart from the ashy smoke, the finish is of medium length.
Conclusion
This Caol Ila once again proves two things to me. Firstly, Caol Ila is often unfairly criticised in comparison to the other Islay distilleries. Secondly, Caol Ila works well with a variety of cask maturations. I really like this ADoS Bottling. Beautiful great nose. Sweet, strongly spicy taste with enough smoke and ash. Only the increasing bitterness towards the end detracts a little from the otherwise very positive overall impression.
