Auf der Suche nach der nächsten Kostprobe fürs Tasting stieß ich in einer meiner Sampleboxen (ja, ich hab mehr davon...) auf ein Sample eines 20jährigen Tobermory, destilliert 1995 und 2015 vom unabhängigen Abfüllungen Meadowside Blending für seine The Maltman-Reihe abgefüllt. Die Reifung fand in einem Refill Sherry-Butt statt.
Tobermory - die Brennerei mag ich sehr, also passt! Das Alter von 20 Jahren, perfekt und auch der Zeitraum zwischen Destillation und Abfüllung ist sehr spannend. So viele Single Malts aus dieser Zeit hatte ich noch nicht im Glas. Und von Meadowside Blending bin ich eigentlich noch nie wirklich enttäuscht worden, was die in die Flaschen füllen hat immer Qualität.
Also ein optimales Sample für meinen wöchentlichen Tastingbeitrag. Selbstverständlich wurde nicht gefärbt und keine Kühlfiltration verwendet. Die Alkoholstärke ist mit 49,2% auch eine ideale Trinkstärke. Bleibt nur noch ran an den Whisky!

Nase
Also gleich vorweg, der Alkohol ist perfekt integriert. Da sticht oder stört nichts beim Hineinriechen ins Glas. Auch sonst ist der Geruch sehr elegant und harmonisch. Reife rote Äpfel, Weinbergpfirsiche und eine feine Honigmelone sorgen von Beginn an für eine sehr fruchtige Atmosphäre. Begleitet werden die Fruchtaromen von einer leichten süßen Honignote. Dies ist schon sehr delikat.
Im Hintergrund schwingt ständig eine leicht trockene Mineralität mit, ähnlich einem trockenen Weißwein, einem Grünen Veltliner oder Riesling auf kalkhaltigem Boden ausgebaut nicht unähnlich. Mit Fortdauer wird diese leicht maritim wirkende Mineralität stärker. Die Fruchtaromen bekommen nun Unterstützung vom Duft einer feuchten Waldwiese, nach einem Regenguss, erdig, pflanzlich.
Also von den Refill Sherry-Butts merkt man anfänglich eher weniger bis gar nichts. Dies ändert sich jedoch nach ungefähr 45 Minuten Standzeit im Glas. Dann finden sich plötzlich schokoladige Töne, Haselnüsse und eine tolle Dunkelfruchtigkeit. Nach dem ersten Schluck wechselt der Eindruck komplett Richtung Sherryfass.
Geschmack
Ein cremiger und zugleich sehr Mundraum auskleidender Beginn. Nun ist der Sherryeinfluss mit getrockneten Feigen, Datteln, süßem Pflaumenmus und Rosinen omnipräsent. Das hätte ich nach der Nase so nicht erwartet! Die im Geruch vorhandenen Äpfel und Pfirsiche sind komplett verschwunden. Dafür zeigt sich eine Vollmilchschokolade mit Toffee und gerösteten Haselnüssen.
Im Mittelteil wird die Eiche kräftiger. Eine angenehme Würzigkeit, gepaart mit etwas Pfefferschärfe übernimmt von den Sherryfassnoten. In Richtung Abgang wird es im Mundraum etwas trocken werdend, vor allem seitlich an den Wangen und vorne beim Zahnfleisch.
Abgang
Es wird muffiger gegen Ende hin, die Eiche dominiert im Finish ohne bitter zu werden. Es bleibt auf der aromatischen Seite. Die Rosinen, zusammen mit den Datteln und den Haselnüssen begleiten einem noch länger. Sehr angenehmer mittellanger Abgang.
Fazit
Ein Chamäleon! Die Nase ist lange hellfruchtig mit mineralischem Touch und lässt einen eher an eine Bourbonreifung denken, um dann im Mund zum gediegen, leicht muffigen Sherrykeller zu mutieren. So einen Unterschied zwischen Geruch und Geschmack hatte ich noch nie. Der Kontrast ist interessant und funktioniert. Die Charakteristik des Whiskys gefällt mir mit seiner Eleganz und Ausgewogenheit sehr gut. Einen Whisky, der in den 90igern gebrannt wurde zu kosten ist immer spannend.

While looking for the next sample to taste, I came across a sample of 20 year old Tobermory in one of my tasting boxes (yes, I have more...), distilled in 1995 and bottled in 2015 by independent bottlers Meadowside Blending for their The Maltman range. Matured in a refill sherry butt.
Tobermory - I really like the distillery, so it fits! The age of 20 years is perfect and the period between distillation and bottling is very exciting. I've never had so many single malts from this period in my glass. And I've never really been disappointed by Meadowside Blending, what they bottle is always of the highest quality.
So an ideal sample for my weekly tasting article. It goes without saying that no colouring or chill filtration was used. The alcoholic strength of 49.2% is also an ideal drinking strength.
Now it is time for the whisky!

Appearance
Rich golden colour
Nose
First of all, the alcohol is perfectly integrated. There is nothing pungent or disturbing when you smell it in the glass. The aroma is also very elegant and well balanced. Ripe red apples, vineyard peaches and a fine honeydew melon create a very fruity atmosphere right from the start. The fruity aromas are accompanied by a light, sweet honey note. This is already very delicate.
A slightly dry minerality lingers in the background, not unlike a dry white wine, a Grüner Veltliner or a Riesling grown on chalky soils. This slightly maritime minerality becomes stronger with time. The fruity aromas are now supported by the scent of a damp forest meadow after a downpour, earthy and planty.
Initially there is little or no evidence of the refill sherry casks. This changes after about 45 minutes in the glass. Suddenly there are chocolate notes, hazelnuts and a great dark fruitiness. After the first sip, the impression changes completely to that of a sherry cask.
Palate
A creamy and very mouth-filling start. Now the sherry influence is omnipresent, with dried figs, dates, sweet plum jam and sultanas. I wouldn't have expected this from the nose! The apples and peaches present on the nose have completely disappeared. In their place is milk chocolate with toffee and roasted hazelnuts.
The oak gets stronger in the middle. The sherry cask notes are replaced by a pleasant spiciness coupled with a little peppery sharpness. The mouth becomes a little dry towards the finish, especially on the sides of the cheeks and the front of the gums.
Finish
Towards the end, the oak dominates the finish without becoming bitter. It stays on the aromatic side. The sultanas, together with the dates and the hazelnuts, remain in the mouth for a long while. A very pleasant medium-long finish.
Conclusion
A chameleon! Lightly fruity on the nose for a long time, with a mineral touch that makes you think of a bourbon cask, only to mutate into a dignified, slightly musty sherry cellar in the mouth. I've never experienced such a difference between nose and palate. The contrast is interesting and it works. I really like the characteristics of the whisky, with its elegance and balance. It is always exciting to taste a whisky distilled in the 90s.
